Capers are the buds of the inflorescence that bloom to form a magnificent flower. Between the end of May and mid-August of each year, the unopened buds are collected one by one, divided according to size and added with sea salt. They are then mixed daily to promote fermentation that gives the right maturation and a particularly intense flavor to the tasty little buds.
