Podere Ciriolino is obtained from a selection of Cesanese di Affile grapes (100%) from four vineyards planted at different times.
The grapes are harvested manually, when the ripeness has reached the optimal level. The grapes from the various vineyards are fermented separately in cement tanks. The fermentation is spontaneous and lasts about 10 days. After racking, it ages in cement tanks on its fine deposits for about a year. Before bottling, the different masses are assembled. After bottling, Podere Ciriolino for a further 3 months.
