The extra virgin olive oil “Ventoso di Maestrale” is produced from olives harvested in the Bitritto countryside.
The olives, of the Ogliarola Barese and Coratina cultivars, harvested directly from the plant, are processed within 24 hours in the company mill.
Green in colour during production, it evolves during maturation to a straw yellow with green reflections.
On the nose hints of artichoke and green almond. The flavor is soft and balanced, characterized by tones of fresh herbs and sweet almond on the finish.
“Ventoso di Maestrale” is an oil that can be used in the kitchen to flavor any type of dish without altering the specific characteristics of the raw materials used. Ideal on boiled or roasted fish preparations, fried seafood, sauces and roast meats.
