The book "Roscioli, il pane, la cucina e Roma"
At the end of the 50s, 11 brothers and cousins arrived in Rome from Rocca di Montemonaco, a small town in Marche region. They will all end up being bakers in the capital.
This is how the book begins, with the story of Marco, and it tells about the family, the hard work, the evolutions and the research around an ancient Roman oven.
The book includes 30 iconic recipes from the bakery, the restaurant and the cafè and also delves into the ancient roots of the capital's baking, from the Romans to this day.
Written by Elisia Menduni, photographs by Maurizio Camagna and published by Giunti in 2016.
